You can actually use any kind of thread, but keep in mind the thicker the thread, the larger the project will turn out. Therefore, fine thread is more recommendable for lace-making.

I came across several books with examples and instructions on the art of bobbin, but you don't even have to buy those; lots of examples, instructions and explanations can be found online for free.
I am glad to see that this intricate and delicate art is not extinct and has been taken up as a hobby by so many; the results are absolutely gorgeous!
