Framing it, like in this picture is a very unique and simple solution to an otherwise relatively boring gift and it also prompts more ideas; use coins to cover a box, a picture frame, coasters, etc.

That is another option: coins are often used for jewelry. That is rather easy, because all you would have to do is drill a small hole in the coin, put a bracket through it and you are good to go.
I have no doubt your imagination and creativity will come up with a lot more artistic ideas where it concerns works of art with coins, then the two cents I put in!
